In the two weeks immediately following Jesus’ resurrection, there was plenty of opportunity for doubt.  First there’s Thomas, who doesn’t happen to be present with the rest of the disciples when Jesus first appeared to them post resurrection.   When Thomas hears about Jesus appearance, he says “I won’t believe it unless I sees the nail marks in his hands and put my hand in his wounds.”  But apparently just seeing Jesus is enough for Thomas, because when he does witness the resurrected Lord standing in front of him he quickly confesses, “My Lord and my God”.
